Aazol's Goda Masala is a blend of aromatic whole spices that stands apart from other spicy masalas for its unique mild sweet aftertaste. This masala is Maharashtra's most famous spice export and indispensable to the state's vegetarian dishes.
Provenance
Nothing says Maharashtrian like Goda Masala. A spice mix traditionally used by the Puneri Brahmins, it’s now ubiquitous across Maharashtra’s communities and is made without garlic and onion. While every family has its own goda masala recipe for it, it’s incomplete without the key constituent dagad phool or stone flower, a lichen that lends it a distinct aroma. Lacking the pungency of several of the state's other spice mixes, Goda Masala imparts a delicate but deep, sweetish fragrance to a dish that’s unmistakable.
