Provenance

Nothing says Maharashtrian like Goda Masala. A spice mix traditionally used by the Puneri Brahmins, it’s now ubiquitous across Maharashtra’s communities and is made without garlic and onion. While every family has its own goda masala recipe for it, it’s incomplete without the key constituent dagad phool or stone flower, a lichen that lends it a distinct aroma. Lacking the pungency of several of the state's other spice mixes, Goda Masala imparts a delicate but deep, sweetish fragrance to a dish that’s unmistakable.

Based out of Pune, Santkrupa SHG is a second-generation women-run family business that had its reigns pass down from mother-in-law to daughter-in-law. Set up with an intention to upskill and empower marginalised women, Smita Vishal Yadav runs a happy ship with 50 female employees, many of whom have been with the business for over 10 years. Ingredients

1 cup Matki (moth beans)
3 tbsp Oil
Pinch of Asafoetida
1 tsp Mustard seeds
Few Curry leaves
3 Onions, finely chopped
1 tbsp Ginger garlic paste
3-4 Green chillies, slit
1 large Tomato, finely chopped
1 tbsp Chilli powder
1 tsp Turmeric powder
1.5 tbsp Goda Masala
1 cup Fresh coconut, grated
1 tbsp Jaggery
1 heaped tbsp Tamarind, soaked in hot water and pulped
Salt to taste
Few leaves of Coriander, chopped to garnish

1. Wash the matki or moth beans 3-4 times and soak in water for 8 hours. Wash again, drain the water and place in a strainer balanced on a vessel to collect the dripping water if any. Cover the strainer with a wet cloth and set aside in a warm place overnight. You’ll wake up to a bowl of freshly sprouted beans that are a treasure of iron and B vitamins. Supermarkets and local neighbourhood stalls also sell pre-sprouted beans

2. Heat the oil in a deep pan and add mustard seeds. When they splutter, add the curry leaves and asafoetida.

3.Next, add the onions and sauté till translucent and soft. Now, add the ginger, garlic paste and sauté till the raw smell of the onion disappears.  

4. Add the tomatoes, stir and cook till they soften and the oil leaves the sides of the pan. Add the green chillies, chilli powder, turmeric powder, Goda Masala and mix well on low flame.  

5. After 5 minutes, add the sprouted moth beans and sauté gently for a minute.

6. Add 3 cups water to the pan, season with salt. Bring to a boil. Turn down the heat. (If you wish to hasten the process, you can cook the sprouted matki in a pressure cooker (2 whistles and then 5 minutes on low flame).

7. Grind the coconut with tamarind pulp to a fine paste and add this to the curry.

8.Give it a stir before adding jaggery. Cover and cook on low flame till the matki is cooked and soft.
You can control the consistency of the dish (runny or thickish) by adding water.

9. Spoon out the matki in a bowl and garnish with chopped coriander.

10. Serve hot with Tandlachi or Jwarichi bhakri. If you’ve kept it runny, you can even team it with rice.

1/4 cup Dried coconut, grated
1 tbsp Tamarind pulp
1.5 tbsp Jaggery, crushed
1/2 tsp Red chilli powder
1/2 tsp Goda Masala
1 tsp Fresh coconut, scraped
2 tbsp Coriander leaves, chopped
¼ tsp Mustard seeds
½ tsp Turmeric powder
Pinch of Asafoetida
Salt to taste
1 tsp Oil

1. Wash brinjals and remove the green part of the stem attached to the brinjal, but leave half inch of the stem to allow you to hold the brinjal. This also prevents the brinjals from breaking while cooking. Make two perpendicular slits about ¾th length deep on the body of the brinjals.

2. Dry roast the sesame seeds and grated dried coconut separately till light brown. Grind into a coarse powder. To the tamarind pulp, add jaggery, red chilli powder, Goda masala, fresh coconut, chopped coriander and salt. Now, add the roasted powders to form a coarse paste. Add water if required to make a thick gravy-like mixture.

3. Stuff about a teaspoon of the mixture into each slit of the brinjals. Keep the remaining mixture aside.

4.Heat oil in a pan on medium flame. Add mustard seeds, wait for them to splutter. Add turmeric powder and asafoetida. Add the stuffed brinjals and cover the pan. Cook on low flame for 2-3 minutes. Flip each brinjal over, cover the pan again and cook for another 4 minutes. When the brinjals turn dark purple, add the remaining mixture. Add enough water to just about cover the brinjals and cook till they turn soft and the gravy is thick.

5. Serve hot with Bhakri.

1 cup Cauliflower florets
2 tsp Goda Masala
6 Black pepper seeds
4 Cloves
1 Bay leaf
1 inch Cinnamon
2 Green cardamom
½ to 1 tsp Chilli powder
10 Curry leaves
1 tsp Lime juice
3 tbsp Fresh coconut, scraped
2 tbsp Coriander leaves, chopped
2 tbsp Cashew
2 tbsp Oil
½ tsp Mustard seeds
½ tsp Cumin seeds
½ tsp Turmeric powder
2 pinch Asafoetida
1 tbsp Pure Ghee
Salt to taste

This easy and nutritious one-pot recipe comes out fragrant with the warm flavour of Goda masala. The wafting aroma is a dead giveaway to you neighbours that you are cooking something out of the box.

1. Wash rice and leave it to soak in water for 30 minutes. Soak cauliflower florets in salt water for 10 minutes to remove any dirt or insects, then drain.

2. In a pan, heat oil, add mustard seeds. When they splutter, add cumin seeds. When they crackle, add turmeric powder, asafoetida, black pepper, cloves, cinnamon, green cardamom, bay leaf, curry leaves and cashew nuts. Stir well and let this roast well in the oil. After 2 minutes, add the florets and sauté on high heat for two minutes but do it gently so as not to break them.

3.Add drained rice and sauté the mixture well so that it’s all coated with the masala.

4. Simultaneously, boil 2.5 cups of water. Add to the pan. Stir and add salt, chilli powder, lime juice and Goda masala. Give it a good stir. 

5. Cover the pan and cook the mixture on low heat until the rice is done. Check along the way to see if more water is required to cook the rice.

6.Add fresh scraped coconut and coriander to the Masaale Bhaat, and drizzle some ghee on top. Take off heat.

7.Serve hot with curd, Gahu Kurdai and a pickle of your choice.

      The fragrance, texture and packaging is just perfect to keep the ingredients fresh. A little hot for me, but, worth every morsel. I added it to a stuffing of boiled potatoes with crushed peanuts and sesame which I filled into grilled Anaheim peppers. Drizzled with raita where I used their raita powder sample. Divine
