    The Maharashtrian thecha is fresh chilly chutney made with new green or red chillies. The thechas are a rustic chutney enjoyed by all, from the ordinary farmer to the city dweller. Did you know the word ‘thecha’ means ‘to crush? Usually homemade with a mortar and pestle, these are made in small quantities. And that’s really where the aroma and the flavour both burst forth, when coarsely ground to allow their release.

    Kolhapuri Green Chilli Chutney
