Pithla
This Pithla uses Aazol's Goda Masala: Fragrant Vegetarian Masala to add a warm Maharashtrian spice note to the classic besan preparation. Cooked until smooth and creamy, it is a simple home-style dish for bhakri or rice.

1. Whisk the besan with 2 cups water until completely smooth and free of lumps. Keep aside.
2. Heat oil in a kadai over medium heat. Add mustard seeds and let them crackle.
3. Add cumin seeds, asafoetida and curry leaves, followed by the chopped onion and green chillies. Saute until the onion softens.
4. Add ginger-garlic paste and turmeric. Saute for about 30 seconds.
5. Lower the heat and add Aazol's Goda Masala: Fragrant Vegetarian Masala. Mix briefly without letting the masala burn.
6. Pour in the besan mixture while stirring continuously. Add the remaining water and salt.
7. Cook on low to medium heat for 8-10 minutes, stirring frequently, until the pithla thickens and the raw aroma of besan disappears.
8. Finish with chopped coriander and serve hot with bhakri, chapati or steamed rice.
