Using Aazol's Goda Masala

Masale Bhaat

This Masale Bhaat uses Aazol's Goda Masala: Fragrant Vegetarian Masala to flavour rice and seasonal vegetables with the warm, mildly sweet aroma associated with traditional Maharashtrian cooking.


Masale Bhaat

Ingredients:

  • 1 cup rice
  • 2 cups mixed vegetables such as cauliflower, carrot, brinjal and capsicum
  • 1 small onion, thinly sliced
  • 1 tablespoon Aazol's Goda Masala: Fragrant Vegetarian Masala
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon mustard seeds
  • 1 bay leaf
  • 2 tablespoons oil
  • 2 cups hot water
  • 1 tablespoon grated fresh coconut
  • 10 cashews, lightly roasted
  • 1 teaspoon ghee
  • 1/2 teaspoon salt
  • 2 tablespoons chopped coriander leaves
  • Instructions:

    1. Rinse the rice well and soak it for 20-30 minutes. Drain completely and keep aside.

    2. Heat oil in a heavy-bottomed pan. Add mustard seeds and allow them to crackle, then add the bay leaf.

    3. Add the sliced onion and saute until soft and lightly golden.

    4. Add the mixed vegetables and turmeric. Saute for 3-4 minutes.

    5. Add Aazol's Goda Masala: Fragrant Vegetarian Masala and the drained rice. Gently stir for 1-2 minutes so the grains are evenly coated without breaking.

    6. Pour in the hot water and add salt. Bring to a boil, then cover and cook on low heat until the rice and vegetables are tender and the water is absorbed.

    7. Switch off the heat and let the rice rest, covered, for 5 minutes.

    8. Fluff gently with a fork. Finish with ghee, grated coconut, roasted cashews and coriander before serving.
