Using Aazol's Goda Masala

Chana Usal

This Chana Usal uses Aazol's Goda Masala: Fragrant Vegetarian Masala to flavour chickpeas with the warm, roasted spice profile of Maharashtrian home cooking. Coconut and a light onion-tomato base keep the usal hearty without making it heavy.


Chana Usal

Ingredients:

  • 2 cups cooked chickpeas (kabuli chana), drained
  • 1 medium onion, finely chopped
  • 1 medium tomato, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 2 teaspoons Aazol's Goda Masala: Fragrant Vegetarian Masala
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder, optional
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 1 1/2 tablespoons oil
  • 2 tablespoons grated fresh coconut
  • 1/2 cup water
  • 1/2 teaspoon salt
  • 2 tablespoons chopped coriander leaves
  • Lemon wedges, for serving
  • Instructions:

    1. Heat oil in a kadai over medium heat. Add mustard seeds and let them crackle, then add cumin seeds and asafoetida.

    2. Add the chopped onion and saute until soft and light golden.

    3. Add ginger-garlic paste and cook for 30-60 seconds, then add the tomato and cook until soft.

    4. Add turmeric, optional red chilli powder and Aazol's Goda Masala: Fragrant Vegetarian Masala. Mix and cook on low heat for about 30 seconds.

    5. Add the cooked chickpeas, salt and water. Mix well.

    6. Cover and simmer for 8-10 minutes, stirring once or twice, until the chickpeas absorb the flavours and the usal is slightly moist.

    7. Add grated coconut and cook uncovered for another 2 minutes.

    8. Finish with coriander and serve hot with lemon wedges, chapati, bhakri or pav.
