Solapuri Peanut Chutney Stuffed Paratha
This stuffed paratha uses Aazol’s Solapuri Peanut Chutney as the centre of a simple onion and coriander filling. The dry peanut chutney adds a nutty, spicy flavour that works naturally inside a soft whole-wheat paratha.
Ingredients:
Instructions:
1. Combine the whole wheat flour with 1 teaspoon oil. Add water gradually and knead into a soft, smooth dough. Cover and rest for 15 minutes.
2. For the filling, combine Aazol’s Solapuri Peanut Chutney, very finely chopped onion, coriander and lemon juice. Mix just before stuffing so the onion does not release too much moisture.
3. Divide the rested dough into 4 equal portions and shape each into a smooth ball.
4. Roll one dough ball into a small disc. Place one-fourth of the peanut chutney filling in the centre, leaving a clear border around the edge.
5. Bring the edges together over the filling and seal well. Flatten gently, dust lightly with flour and roll into a medium-sized paratha.
6. Heat a tawa over medium heat. Place the paratha on the hot tawa and cook until small bubbles and light golden spots appear.
7. Flip, brush with a little of the remaining oil and cook. Flip once more and cook until both sides are evenly golden and the paratha is cooked through.
8. Repeat with the remaining dough and filling. Serve hot with curd or a simple vegetable preparation.
Enjoy these warm, nutty and spicy stuffed parathas made with Aazol’s Solapuri Peanut Chutney!
