Puran Poli
This Puran Poli, made with A2 Gir Cow Ghee: Pure Gharwala Ghee, combines a soft chana dal and jaggery filling with a tender wheat dough. Cooked gently with A2 Gir Cow Ghee: Pure Gharwala Ghee until golden, it makes a comforting Maharashtrian festive favourite.

1. Wash the chana dal thoroughly and pressure cook with enough water until soft but not mushy.
2. Drain any excess water, then mash the cooked dal until smooth.
3. Add the grated jaggery to the dal and cook on low to medium heat, stirring continuously until the mixture thickens.
4. Add 1 tablespoon A2 Gir Cow Ghee: Pure Gharwala Ghee, cardamom powder, and nutmeg powder. Mix well, then let the puran cool completely.
5. Combine whole wheat flour, all-purpose flour, turmeric powder, salt, and 1 tablespoon A2 Gir Cow Ghee: Pure Gharwala Ghee. Add water gradually and knead into a soft dough. Cover and rest for 20–30 minutes.
6. Divide the dough and cooled puran into equal portions. Flatten one dough ball, place a portion of puran in the centre, and seal the edges.
7. Dust lightly with flour and gently roll the stuffed dough into a round poli, taking care not to let the filling come out.
8. Heat a tawa over medium heat and cook the puran poli until light golden spots appear. Flip and apply a little A2 Gir Cow Ghee: Pure Gharwala Ghee.
9. Cook both sides until evenly golden and soft. Repeat with the remaining dough and filling.
