Ghee-Roasted Makhana
This Ghee-Roasted Makhana, made with A2 Gir Cow Ghee: Pure Gharwala Ghee, combines crisp makhana with a light seasoning of turmeric, red chilli and black pepper. Slow-roasted over low heat until crunchy, it makes an easy everyday snack.

1. Heat A2 Gir Cow Ghee: Pure Gharwala Ghee in a heavy-bottomed pan over low heat.
2. Add the makhana and roast on low heat for 10–12 minutes, stirring frequently so they roast evenly without browning too quickly.
3. Check one makhana by breaking it between your fingers. It should feel crisp all the way through and not soft in the centre.
4. Turn off the heat and immediately add turmeric powder, red chilli powder, black pepper powder and salt.
5. Toss well while the pan is still warm so the spices coat the makhana evenly without burning.
6. Serve warm, or allow the Ghee-Roasted Makhana to cool completely before storing in an airtight container.
