Bhardi is a traditional multigrain baby porridge homemade by mothers in Maharashtra to provide nutritious sustenance to babies. A mix of dal, nuts, cereals, seeds and dry fruits, it is a rich source of fibre, minerals, vitamins, protein and healthy fats that bolster muscle development and help build a child’s immunity. It can make for a flavourful, light-on-the-tummy breakfast for adults too.
Ingrained in traditional community life, Bhardi is fed to babies across Maharashtra's hinterland. The ingredients are carefully dry roasted before they are pounded to make a porridge recipe mix that's the quintessential Indian answer to commercial baby food. Your grandmother would approve.
Mother and daughter duo, Neelima Madhukar Naik and Snehal Pravin Naik, laid the foundation of Naik’s Konkan Food Bazaar way back in 2006. Neelima’s confidence in her long-perfected recipes combined with the highest quality of local ingredients fuelled their modest business providing Konkani food essentials including pickles, papad, flour and speciality products under one roof. 15 years later, the family business employs nine hardworking women and is run by her grandson Siddharth who takes utmost pride in his Aaji’s recipes and describes her as a relentless woman, who even at the age of 75 insists on making her own pickles and mixes.
1. In a medium saucepan, roast Bhardi on a very slow flame for 3-4 minutes till it emits a well-roasted aroma. Keep stirring to avoid burning it. If you stop this process too soon, it will remain raw.
2. Once done, gently pour in the milk while stirring to ensure no lumps are formed. If they do, use a silicon spatula to flatten the lumps. This takes some patience. You can dilute the milk with half a cup of water if you like. The flame should be low.
3. Add jaggery powder or Kaakvi to sweeten. Keep stirring till the mixture reaches the consistency of a thick porridge. If it starts to dry out too fast, switch off the flame and continue stirring.
4. Top with dry fruits and nuts and serve warm.
