Instructions:
1. Combine whole wheat flour with 2 teaspoons oil. Add water gradually and knead into a soft, smooth dough. Cover and rest for 20 minutes.
2. In a bowl, mix the mashed potatoes with Aazol's Spicy Red Chilli Chutney: Varhadi Thecha, coriander leaves and roasted cumin powder. Taste before adding any extra salt.
3. Divide the dough and the potato filling into 6 equal portions.
4. Take one dough portion, flatten it and roll it into a small circle. Place one portion of filling in the centre.
5. Bring the edges together and seal well. Flatten gently, dust with flour and roll into a medium-sized paratha without pressing too hard.
6. Heat a tawa over medium heat. Place the paratha on the hot tawa and cook until small bubbles and light spots appear.
7. Flip, apply a little oil or ghee, and cook both sides until golden with crisp spots. Repeat with the remaining portions.
8. Serve hot with plain curd or a simple raita.
