Jaggery is one of the oldest sweeteners in the world, used in India since the Vedic age. It is an unrefined natural sugar produced from slow cooking sugarcane juice without the addition of chemicals. Mentioned in the Charaka Samhita, the oldest and most authentic Ayurveda text, jaggery has been recommended by Ayurvedic medicine for over 3,000 years. It is nutritionally comparable to honey and contains vital minerals and vitamins absent in refined sugar. Today it forms the core of many traditional Indian sweets ranging from puran poli to ladoo, halwa to gajak.
About The Seller
Driven by his keen interest in indigenous agricultural techniques, Bapusaheb Gade Patil started Sai Amrut in Shrirampur, the sugarcane belt of Maharashtra, with the objective of promoting organic farming. From conducting seminars to sharing articles in regional newspapers, he devoted himself to educating and motivating local farmers. Bapusaheb, being the visionary he was, then set a new precedent by launching a small jaggery mill with two farmers in 2010 to manufacture products directly for end-consumers rather than supply to sugarcane mills who used preservatives. Such was his commitment that even though he was ill, Bapusaheb went ahead with conducting a seminar in Mumbai and unfortunately met with a fatal accident on his way back. After his demise, his sons Ajay and Pranay continue to advance their father’s vision of sustainable natural farming with the support of 47 farmers. Today, their use of in-house unadulterated ingredients including desi cow ghee is what makes their sugarcane products last six months without any additives with a taste that puts any sweetener you have ever tried to shame!

A light, crunchy, and naturally sweet treat, Kurmura Ladoo is a traditional Indian snack packed with the goodness of Aazol’s Organic Jaggery Cubes and the warmth of ginger powder. Perfect for festive occasions or as a healthy snack, this ladoo is easy to make and full of flavour.
Ingredients
- 3 cups puffed rice (kurmura)
- 1 cup Aazol’s Organic Jaggery Cubes (text in a different colour)
- 2 tbsp ghee
- ½ tsp ginger powder
Method
1. Roast the Puffed Rice
- Heat a pan on low flame and add the puffed rice.
- Dry roast for 3-4 minutes, stirring continuously until it turns crisp.
- Transfer to a plate and let it cool completely.
2. Prepare the Jaggery Syrup
- Cut Aazol’s Organic Jaggery Cubes into smaller pieces for easy melting.
- Heat ghee in a heavy-bottomed pan and add the jaggery cubes.
- Stir on low heat until the jaggery melts completely and forms a sticky syrup.
- To check the right consistency, drop a small portion into cold water—if it forms a soft ball, it's ready.
3. Mix the Ingredients
- Add roasted puffed rice and ginger powder to the melted jaggery.
- Mix quickly and ensure the kurmura is well coated with the syrup.
4. Shape the Ladoos
- Grease your hands with ghee to prevent sticking.
- Take a small portion of the mixture and roll it into firm ladoos.
- Work quickly before the mixture cools and hardens.
5. Serve & Store
- Allow the ladoos to cool completely before storing them in an airtight container.
- Enjoy as a light, nutritious snack with a cup of chai!

Main Ingredients:
- 1 cup white sesame seeds (til)
- ½ cup raw peanuts
- ¾ cup Aazol’s Organic Jaggery Cubes (cut into small pieces)
- ¼ cup cashews (chopped)
- 1 tbsp ghee (+ extra for greasing hands)
Optional Additions (for extra flavor and nutrition):
- ¼ tsp cardamom powder (for aroma)
- 1 tbsp grated dry coconut (for a richer taste)
Method:
Step 1: Roast the Sesame Seeds
- Heat a heavy-bottomed pan on medium heat.
- Add white sesame seeds (til) and dry roast for 3-4 minutes, stirring continuously until they turn golden brown and release a nutty aroma.
- Transfer the roasted sesame seeds to a plate and let them cool completely.
Step 2: Roast and Crush the Peanuts
- In the same pan, dry roast ½ cup peanuts on medium heat until they become crisp and slightly browned (about 4-5 minutes).
- Remove from heat and let them cool. Once cooled, rub them between your palms or in a clean kitchen towel to remove the skin.
- Crush the peanuts coarsely using a mortar and pestle or a rolling pin. Set aside.
Step 3: Prepare the Jaggery Syrup
- Cut Aazol’s Organic Jaggery Cubes into small pieces for easy melting.
- In a pan, add the jaggery pieces with 1 tbsp water and melt on low heat, stirring continuously.
- Once melted, cook for 1-2 minutes until the syrup thickens slightly. To check the consistency, drop a little syrup in water—if it forms a soft ball, it's ready.
Step 4: Mix Everything Together
- Add the roasted sesame seeds, crushed peanuts, and chopped cashews to the jaggery syrup. Mix well so everything is evenly coated.
- Add 1 tbsp ghee and stir to combine. If using, add cardamom powder and dry coconut at this stage.
Step 5: Shape the Ladoos
- Allow the mixture to cool slightly but keep it warm enough to shape.
- Grease your palms with ghee. Take a small portion of the mixture and roll it into a round ladoo.
- Repeat with the remaining mixture.
Step 6: Serve & Store
- Let the ladoos cool completely before transferring them to an airtight container.
