Provenance
Named after the ghaats or the Sahyadris, a north west mountain range that runs alongside the Deccan Plateau, Ghati Masala represents through its earthy flavour the strong link that the people of Paschim Maharashtra or Desh have with their land. The region – which became the seat of the Maratha empire under Chhatrapati Shivaji in the 17th century – experiences unforgiving summers and severe winters, testing its residents' indomitable spirit a little more each season.

Back in 1970, Mr. Sanjay Pol's parents embarked on a journey crafting authentic masalas in Mumbai, drawing from cherished recipes that spanned generations. Young Sanjay, inspired by their dedication, joined the process, turning a childhood fascination into a lifelong passion.
Guided by his mother's wisdom, Sanjay mastered the art of blending spices, infusing each masala with a touch of heritage. What began as a small venture soon outgrew its Mumbai roots, leading to a new chapter in the tranquil village of Masur. Today, the legacy thrives, providing employment to 4 to 5 individuals, including 4 talented women. Egg Bhurji using Aazol’s Ghati Masala
Elevate your breakfast or snack time with this spicy and flavourful Egg Bhurji, infused with the robust taste of Aazol’s Ghati Masala.
Ingredients:
- 2 tbsp Oil
- 1 tsp Jeera (cumin seeds)
- 2–3 Green chillies (chopped)
- 2 tbsp Fresh coriander (chopped)
- 4 Garlic cloves (chopped)
- 1 medium Onion (chopped)
- 1 medium Tomato (chopped)
- 1/4 tsp Haldi (turmeric powder)
- 1 tbsp Aazol’s Ghati Masala
- Salt (to taste)
- 4 Eggs
Method:
1. Heat Oil and Sauté Aromatics:
- Heat oil in a pan. Add jeera and let it splutter.
- Add chopped green chillies, coriander, and garlic. Stir for 1–2 minutes.
2. Cook Onions:
- Add chopped onions and stir. Cook until golden brown.
3. Add Tomatoes and Spices:
- Stir in chopped tomatoes, haldi, Aazol’s Ghati Masala
- Mix well, cover the pan, and let it cook until the tomatoes soften.
4. Prepare the Egg Bhurji:
- Remove the lid and stir the cooked mixture.
- Break eggs directly into the pan and stir continuously to scramble them evenly with the masala.
5. Finish with Fresh Coriander:
- Add more chopped coriander for freshness and stir well.
6. Serve Hot:
- Serve the egg bhurji with pav, roti, or as a filling for wraps or sandwiches.

Vegetable Pulao using Aazol’s Ghati Masala and
A hearty and aromatic one-pot meal, this Veg Pulao combines the wholesome goodness of Aazol’s Indrayani Rice and the rich, bold flavours of Aazol’s Ghati Masala.
Ingredients:
- 2 tbsp Aazol’s Gharwala Ghee
- 1 tsp Jeera (cumin seeds)
- 1 medium Onion (chopped)
- 1 medium Tomato (chopped)
- 1 cup Cauliflower florets
- 1 medium Carrot (diced)
- 2 Green chillies (slit)
- 1/2 cup Green peas
- Salt (to taste)
- 1/4 tsp Haldi (turmeric powder)
- 1 tsp Dhaniya powder (coriander powder)
- 1 tbsp
Aazol’s Ghati Masala- 1 cup
Aazol’s Indrayani Rice (washed and soaked)- 3/4 cup Water
Method:
1. Heat the Ghee and Sauté Aromatics:
- Heat Aazol’s Gharwala Gheein a pressure cooker.
- Add jeera and let it crackle.
- Stir in the chopped onions and sauté until golden brown.
2. Add Tomatoes and Vegetables:
- Add chopped tomatoes and cook until soft.
- Mix in cauliflower, carrot, green chillies, and green peas. Stir well.
3. Season and Add Spices:
- Add salt, haldi, dhaniya powder, and Aazol’s Ghati Masala.
- Stir to coat the vegetables evenly with the spices.
4. Combine with Rice:
- Add the soaked and drained Aazol’s Indrayani Rice to the cooker. Stir gently to combine.
5. Pressure Cook:
- Pour in 3/4 cup of water. Close the lid and pressure cook for 2 whistles.
- Allow the steam to release naturally.
6. Garnish and Serve:
- Open the cooker, fluff the rice gently with a fork.
- Garnish with fresh coriander leaves and serve hot.
